Curious as to Vicki Gunvalson’s recipe for her Chinese Chicken Salad on Season 11, Episode 7? Here it is:
1 pkg of finely shredded cole slaw (in pre-pkg lettuce section)
½ c cashews (more or less depending on what you like)
2 pkgs Raman noodles (chicken flavor)
Green onions (cut up)
1 whole warm rotisserie chicken from deli
2/3 c. vegetable oil
2 seasoning packets in pkg of Raman noodles
2 Tbsp vinegar
4 Tbsp sugar
Break up noodles in package (don’t cook them) in small pieces with hands prior to opening up pkg. Toss with cole slaw, green onions and cashews. Shred chicken and add to salad.
In separate bowl, combine all dressing ingredients and mix thoroughly to dissolve sugar. Add dressing to slaw and toss last minute. Add cashews.
Note: Taste dressing and adjust for personal taste. I usually add a little more vinegar. I also add red peppers to this sometimes. Use your imagination.
